\nXisto \u2013 Roquette & Cazes 2012 is a wine made from grapes of the varieties Touriga Nacional and Touriga Franca, along with other local varieties from very old vines.<\/p>\n

GRAPE GROWING AND WINEMAKING<\/strong>
\nVines are planted in Douro\u2019s traditional terraces (socalcos and patamares). The hand-harvested grapes of Xisto \u2013 Roquette & Cazes 2012 come from old vines located in the subregions of Cima Corgo and Douro Superior. All the grapes of Xisto \u2013 Roquette & Cazes 2004 are destemed and crushed. Fermentation takes place in temperature-controlled stainless steel conic vats. Several delestages are applied during the long maceration period. Delestage is a French extraction technique which means that the juice is drained from the fermenting vat leaving the cap behind. The fermenting juice is then pumped back over the cap, maximising the skin contact. This is a very extractive technique but, at the same time, it maintains the elegance of the wine.<\/p>\n

TASTING NOTES<\/strong>
\nColour:<\/strong> Opaque, with a narrow purple\/bluish rim.
\nNose:<\/strong> Very complex on the nose, showing fresh notes of wild berry fruit, elegant spicy hints and delicate cocoa sensations.
\nPalate:<\/strong> Elegant beginning leading to a voluminous wine, with an excellent structure made of powerful yet smooth-textured tannins. Fine hints of wild berry fruit complete the palate. The finish is elegant, round and lingering.<\/p>\n

SERVING SUGGESTIONS<\/strong>
\nDecant before serving. Serving Temperature: 16 \u00baC. Perfect matches: red meat, gamey and seasoned dishes. It is also a good match for traditional Italian dishes.<\/p>\n
